About this Recipe

This comforting dish has everything: creamy white beans, grated cheese, and (obviously) a crunchy potato chip topping.

Cook time: 20-25 minutes

 

 

Tuna & Beans Casserole

 

 

 

 

 

 

Ingredients:

½ chopped onion

3 garlic cloves, sliced

1 can drained white beans

¼ cup water

1/8 cup milk

1 can of tuna

6 tb grated cheese, separated

1 cup potato chips

Pinch of salt, pepper, and red pepper flakes

1 tb butter

 

Directions:

1.   Preheat oven to 350 degrees

2.   Sauté chopped onion in olive oil in cast iron skillet over medium-high heat until soft, about 5 minutes

3.   Add salt, pepper, red pepper flakes, and garlic cloves

4.   When garlic is slightly golden, add beans and water

5.   Let simmer until the liquid evaporates and the beans are soft, about 5 minutes, then mash the beans with a potato masher or a fork

6.   Turn off heat, add milk and tuna (including oil in can)

7.   Mix in “lots of black pepper” and 4 tb of cheese

8.   Top with crushed potato chips

9.   Scatter on remaining grated cheese and dot the top with the butter

10.       Bake until the tuna mixture bubbles around the edges, 20-25 minutes
