A great summer treat that is refreshing when served with vanilla ice cream.

Apple Pudding Cake








1 cups firmly packed brown sugar

1 cup flour

2 tsp baking powder

tsp salt

1 tsp cinnamon

cup milk

2 tbsp olive oil

1 tsp vanilla

1 large Granny Smith apple, chopped

1 cup hot apple cider




1.   Preheat oven to 350 degrees.

2.   Grease an 8- or 9- inch cake pan.

3.   Combine cup brown sugar, flour, baking powder, salt, and cinnamon in the cake pan.

4.   Stir together milk, oil, and vanilla then add to the sugar mixture in the cake pan. Stir until blended.

5.   Stir in chopped apple.

6.   Sprinkle with remaining cup brown sugar. Pour hot apple cider slowly over batter (do not stir!).

7.   Bake at 350 degrees for 35 minutes or until a cake layer forms on top.
